Livening Up Tuna?

Hi Glenny’s Fans,
Any ideas on how to liven up Tuna without adding on too many calories? I love canned tuna, and I’m bored of the Lite Mayo, so I’d love some advice on how I can add zazzle to my staple tuna lunch without compromising my diet.

Pear Bran Muffins

Cook time: 20 minutes
These wholesome, satisfying muffins are filled with tender pieces of pear and spiced with cinnamon. They freeze well; just heat in the toaster or microwave before serving.
Ingredients:
1 1/2 cups whole-grain pastry flour
1 cup wheat bran
2 tablespoons granular sugar substitute
1 1/4 teaspoons ground cinnamon
1 1/4 teaspoons baking soda
1/4 teaspoon salt
1 1/4 cups 1 percent or fat-free buttermilk
2 large eggs, lightly beaten
3 tablespoons canola oil
1 Bosc pear, cored and diced into 1/4-inch cubes
1 1/2 teaspoons vanilla extract
Instructions:
Heat oven to 350°F. Line a muffin tin with paper liners or lightly coat with cooking spray.
Combine flour, bran, sugar substitute, cinnamon, baking soda, and salt in a large mixing bowl. Combine buttermilk, eggs, oil, pear, and vanilla in another mixing bowl.
Make a well in the center of the dry ingredients. Add wet ingredients to dry ingredients and mix just to combine; do not overmix. Divide batter evenly into muffin cups. Bake for 20 minutes. Cool and serve.

How To Turn Down Food When You’re A Guest?

Hey there Glenny’s:
When you’re a guest at someone’s home, what do you do when you’re served fattening foods? For example, the friend serves a sandwich with mayonnaise, a salad with regular dressing, and/or dessert. I was taught that the only polite thing to do is clear your plate. Is there a graceful way to turn down food when one is dieting?

Food cravings are the worst and sometimes I feel like the only way to kill them is to plunge into the ice cream. I’m wondering how others go about killing those dreaded cravings without blowing their diet. What, in your opinion, is the best way to instantly kill a food craving? Thanks! Cary

Strawberry Blancmange

Description
Similar to a Bavarian cream or Italian panna cotta, blancmange is an almond-flavored milk pudding often thickened with gelatin. The name comes from the French blanc (white) and manger (to eat).
Make-ahead tip: Blancmange can be made up to 1 day in advance. Leave in molds, cover with plastic wrap, and refrigerate until ready to serve.
Ingredients
3/4 teaspoon unflavored gelatin
2 tablespoons cold water
1 cup unsweetened almond milk
1/8 teaspoon almond extract
1/8 teaspoon vanilla extract
1/4 cup light or fat-free whipped topping
1 cup diced strawberries
2 small, perfect strawberries for garnish (optional)
Instructions
1. Lightly coat 2 (1/2-cup) ramekins or heart-shaped molds with cooking spray. Sprinkle gelatin over water in a cup and let stand for 2 minutes.
2. Meanwhile, heat almond milk in a small saucepan over low heat, until it comes to a bare simmer. Add gelatin mixture and cook, stirring constantly, until dissolved, about 1 minute. Stir in almond and vanilla extracts. Transfer to a small bowl set over a bowl of ice water and stir until the mixture is thickened slightly. Add the whipped topping and diced strawberries; stir to combine. Divide mixture between ramekins and chill for 2 hours or overnight.
3. When ready to serve, run a knife around the edge of each blancmange and, using your finger to help coax it from the ramekin, gently turn each out onto a plate. Top each blancmange with a whole strawberry, if desired, and serve.

Can I Still Eat Chinese Food When I’m Dieting?

I love Chinese Food, probably way too much. Can I still eat Chinese if I’m dieting? What are my best bets when it comes to Chinese food? I hope I don’t have to give it up. Thanks for any advice.

Afternoon Energy Boost

Hi Glenny’s,
I usually get very tired in the middle of the afternoon. To keep up, I drink coffee sometimes but it doesn’t really energize me enough. In fact, I often feel a bit more tired soon afterwards. I don’t want to start with these Red Bull type of energy drinks, given the high sugar level. Does anyone have any ideas for me for a good mid-afternoon energy boost? Thanks.
