Meals featuring lean cuts of beef, such as top or bottom-round steak, are delicious and good for you. Here is a juicy, protein-packed steak entrée to try. Bon appétit!
Two kinds of mustard and a generous measure of garlic give subtle flavor to this easy steak. Let the meat rest after cooking and slice it as thinly as possible for maximum tenderness.
Makes 4 servings
Ingredients
2 garlic cloves, minced
1 tablespoon coarse-grain Dijon mustard
1 tablespoon Worcestershire sauce
1 teaspoon ground mustard
1/8 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 1/2 pounds boneless top round steak, ¾ inch thick
Instructions
Heat oven to broil. Whisk together garlic, Dijon mustard, Worcestershire sauce, ground mustard, salt, and pepper in a small mixing bowl.
Line a broiler pan with foil and place steak on top. Coat evenly with mustard mixture and let stand 10 minutes. Broil steak to desired doneness, 4 minutes per side for medium-rare. Let stand 5 minutes before slicing and serving.

Healthy Tips for Chocolate Lovers

Who doesn’t love chocolate? But, even though chocolate is not really considered a healthy snack, there are still some things we can do to “improve” our chocolate habit. Here are two tips for “healthier” chocolate consumption:
* Switch to dark chocolate. Chocolate contains antioxidants that may improve cardiovascular health. Dark chocolate (including semisweet and bittersweet chocolate) contains a higher percentage of chocolate liquor and, thus, more of the beneficial compounds than milk chocolate. Despite its name, white chocolate doesn’t actually contain any chocolate liquor (or any of its health benefits).
* Less is more. Don’t overdo it when eating chocolate. An ounce is all it takes to reap the benefits — more will pile on the pounds. One good way to limit intake is to melt a small amount of dark chocolate and use it as a fruit dip.

Marinated Flank Steak

If you love steak, try this mouthwatering marinade made with rosemary, marjoram, and oregano. It’s so simple and delicious, you’ll never go back to bland steak sauce after this!
PREP: 20 minutes MARINATE: 1 to 24 hours GRILL: 17 minutes STAND: 10 minutes MAKES: 8 servings
1 1 1/2-pound to 2-pound beef flank steak
1/4 cup chopped fresh rosemary or 1 tablespoon dried rosemary, crushed
1 tablespoon chopped fresh marjoram or 1 teaspoon dried marjoram, crushed
1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano, crushed
3 cloves garlic, minced (1 1/2 teaspoons minced)
1 1/2 teaspoons paprika
1 teaspoon kosher salt
1 teaspoon crushed red pepper
1 teaspoon freshly ground black pepper
3 tablespoons extra-virgin olive oil
1. Trim fat from meat. Score both sides of steak in a diamond pattern by making shallow cuts at 1-inch intervals; set aside. In a small bowl stir together rosemary, marjoram, oregano, garlic, paprika, kosher salt, crushed red pepper, and black pepper. Stir in the oil until combined.
2. Spoon herb mixture evenly over both sides of steak; rub in with your fingers. Place steak in a shallow dish. Cover and marinate in the refrigerator for 1 to 24 hours.
3. For a charcoal grill, place meat on the rack of an uncovered grill directly over medium coals. Grill for 17 to 21 minutes or until medium doneness (160°F), turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place meat on grill rack over heat. Cover and grill as above.)
4. Transfer grilled meat to a cutting board. Cover and let stand for 10 minutes. To serve, slice very thinly across the grain.

* Buy fruits and vegetables from local farmers and cut down on processed food. This cuts down on the extra energy costs associated with the production and transportation of processed foods.
* Increase your consumption of organic dairy products and other foods to cut down on harmful growth hormones and antibiotics.
