Blueberrie Protein Pancakes: Delicious and Wholesome!

These make a great breakfast because the whole grains and fruit combined with the protein make a wholesome, delicious pancake. This will give you nutrients and long-lasting energy. Enjoy!

Ingredients

1 cup blueberries
*
1 cup low-fat cottage cheese
*
3/4 cup egg substitute (equal to 3 eggs)
*
1/4 cup skim or fat- free milk
*
1 cup whole wheat flour
*
2 Tbsp.sugar or the equivalent in artificial sweetener

Directions

1. Combine the cottage cheese, egg substitute, fat free milk and whole wheat flour in blender. Blend until smooth.

2. Add flour and sugar and blend again.

3. Spray a pan with non-stick cooking spray. When hot, pour batter into the pan to make 12 pancakes. (If pan is small, you may have to cook in batches). Sprinkle with blueberries. Cook until golden brown on both sides.

The blueberries add so much flavor that these taste delicious without a topping. If you still want to add something, try sugar-free syrup which will save you hundreds of calories over the regular version.

Makes 12 four-inch pancakes (6 servings).

Each Serving: 2 pancakes

0mg, cholesterol 2mg, sodium 215mg, total carbohydrate 25g (20g total

    I think there may be a couple of problems with this recipe. The flour is added twice (I think it should be deleted from step 1 – usually recipes call for blending the liquids first then adding the dry ingredients. Then in the stats at the end, it says that the pancakes have 125 calories but 129 if the sugar substitute is used. That doesn’t make sense.

    I checked nutritiontwins.com to see if I could find it, but don’t see it there. Could you send this recipe out again?

    PS – So sorry since I’ve moved to the West Coast that it’s so hard to find your products. I know I could order online, but it’s so expensive. Would love to see you in the mainstream markets out here – Ralphs, Albertsons, etc.
