Side Dish Substitutions

Hi Glenny’s,

I love my meat and veggies, but it’s the side dishes that kill my diet. What are some things I can substitute for rice, pasta or potatoes as a side dish with my meat and veggies? Thanks.

    I love butternut squash and it makes a great side dish. You can mash it, or better yet slice it and bake it into fries! Below is the recipe I found on the Internet: The hardest part about this recipe is peeling and cutting the butternut squash.

    INGREDIENTS:

    * 1-1/2 to 2 pound butternut squash
    * 2 Tbsp. olive oil
    * kosher salt to taste

    PREPARATION:

    1. Preheat oven to 425 degrees F. Spray a heavy baking sheet with nonstick spray.

    2. Peel and seed butternut squash. Kids can do the peeling, under a grown-up’s supervision. Have the grown-up cut the squash in half lengthwise. Kids can seed the squash with a spoon.

    3. Cut into long, 1/2-inch wide strips, like steak fries.

    4. Drizzle olive oil over. Sprinkle with kosher salt. Using your hands, toss the fries to make sure they are evenly coated.

    5. Spread fries out in an even layer on the prepared baking sheet. Bake 20 minutes. Using tongs, turn fries over. Bake another 15 minutes.

    6. Turn heat down to 200 degrees F. Bake another 10 to 15 minutes until fries are golden brown.

    Serve with ketchup. Makes 4 servings

    Yummy….this recipe is easy and a welcome change from carby potatoes! I can’t wait to try it out.Thanks for sharing.

    Make Mashed Cauliflour instead of mashed potatoes, and with the right seasoning you’ll never know the difference.
    Use Shikataki Tofu Noodles in place of regular pasta.
    Try Couscous in place of rice.
    You really don’t have to substitue the potato: Just try to eat a sweet potatoe, leave the skin on, go easy on the condiments, and keep it small

    All of the above suggestions are terrific! You might also want to try quinoa (pronouced keen-wah). It is a complete protein as well as a complex carbohydrate. Try sweet potato chips (homemade) or brown rice instead of white rice. Good luck!

    Birdseye has a frozen squash (comes in a small box) that’s already mashed and cooked. Don’t remember if it’s butternut squash (it’s orange in color). It is easy and quick - just heat and season to taste. I usually add just a little bit of “sugar in the raw” and a bit of cinnamon. Delicious!! Tastes like mashed sweet potatoes.
